my daughter and I are taking her baby to Disney World in February. What hotel offers the best accomodations?

There are a ton of different options outside the parks. It really depends on your price range, desire to be close to the parks, transportation options, and so on.
The less expensive choices will not offer as many accommodations for infants, due to a smaller size room and so on.
One of my favorites is Nickelodeon Family Suites -- it's located just outside Disney World and has separate rooms (suite), so you could rest in one room while the baby sleeps in another -- or just give grandma a break. 
It also has a lot of space for baby supplies, diaper changing, and so on. It also has a microwave and mini-refrigerator.
We also really like Gaylord Palms. The rooms are spacious and the resort is beautiful. It's also very close to Disney World. It's not as child/baby friendly as Nick Family Suites, but a good second option.
